Grape marc spirit is made from the pressed grapes, consisting of skins, seeds, stems and stalks of vinification. This is the pomace, it is the starting product for grappa. The pomace is now distilled twice. What remains is the distillate, a liquid that has a higher alcohol content and all the aromas in concentrated form. Distilling is an art, to distill a good grappa requires a lot of experience. The master distiller must decide how to control the distillation process. The better the master distiller separates the middle run, the purer the distillate. Before bottling, the marc spirit is stored in a glass carboy for ½ year.
